Our Story
Long before the first still was lit, the land beneath our distillery told a very different story. Bonville’s Court takes its name from the De Bonville family — Medieval Norman settlers whose presence here dates back to the 14th century. Centuries later, in 1842, the site became home to Bonville’s Court Colliery, the largest and longest-running colliery in Pembrokeshire.
For 88 years, this remarkable site powered the local economy. At its peak, nearly 350 men worked the land, producing up to 35,000 tons of anthracite coal each year. Its reputation for quality reached the very highest levels — the colliery’s anthracite was selected to fuel Queen Victoria’s Royal Yacht, the Britannia. That’s a legacy that doesn’t go unnoticed.
After the colliery closed, the site lay quiet for decades before being carefully and lovingly restored into what is today Bonville’s Court Country Park — one of Pembrokeshire’s finest holiday retreats. Original buildings were preserved and reimagined; the old Power House now serves as a luxury spa suite. The Britannia Suite, Sovereign Suite, Tower Cottage, and Anthracite Cottage each carry a quiet nod to the industrious past that shaped this land.
Old tramway routes still trace the landscape, a reminder that the spirit of this place has always been one of craft, hard work, and quality.

We are the next chapter in Bonville’s Court Distillery story.
As a family-run distillery, we share the same values that have defined this land for generations — a commitment to quality, a respect for our surroundings, and a deep pride in where we come from. We didn’t choose this location by accident. Saundersfoot and the wider Pembrokeshire landscape offer something truly rare: unspoilt countryside, clean coastal air, and a natural environment that simply makes everything better.
That environment shapes everything we produce. The fresh sea air rolling in from the Pembrokeshire coast, the clean rural surroundings, and the quality of what this land grows — it all finds its way into every bottle we make. Our gins, vodkas, and rums are an expression of this place as much as they are a product of our craft.
We’re not a factory. We’re a family. Every decision — from the botanicals we select to the way we distil — is made with care and intention. We believe that the best spirits come from people who genuinely love what they do, working in a place they genuinely love.
Saundersfoot is our home. Bonville’s Court is our home. And every bottle that leaves our distillery carries a little piece of both.
